Coffee is surprisingly complex, containing 2-3 times more flavor compounds than wine. The flavors we taste correspond with the flavors in foods; if we taste notes of chocolate or green apple, it’s because the coffee contains the same flavor compounds as these foods. 

If you like notes of chocolate, nuts, and sweet heavy fruits, you’ll probably enjoy Latin American coffees; for bold, earthy, heavy-bodied coffees, try an Indonesian single origin. For a delicate, bright and floral cup, with notes of citrus and stone fruits, try an African coffee.

Don’t forget that a tasting guide gives you an idea of flavors and aromas you might notice, but nothing is set in stone. As your taste buds, knowledge and vocabulary improve you may become aware of other flavors and aromas, e.g. an Indonesian coffee with chocolate notes or a floral and fruity Latin American coffee.
